Buttermilk Pancakes by Jackie
Birdie and Kathy are sisters and part of the Utah Avenue Insurance team. They love to work, play and bake together. Baking with family is one of Birdie and Kathy's favorite things to do. The sisters have taught their kids the joy of cooking and want to share some of their favorite recipes with you.
Here is what Jackie, Birdie's daughter, can do best. She makes pancakes from scratch all by her self. Jackie loves to make them for her aunt Kathy whenever she sleeps over. Jackie keeps her Easy-Bake-Oven and Aunt Kathy's house so it's always ready for baking.
Buttermilk Pancakes
2 Cups Buttermilk
1/4 Cup Melted Shortening
2 Eggs
2 tsp Sugar
1 tsp Salt
2 Cups Flour
1 tsp Baking Soda
1 tsp Baking Powder
Okay to substitute melted shortening with vegetable oil. Mix all ingredients together. Don't over mix, leave some small lumps in batter. Cook on hot non-stick pan. Jackie suggests that you serve with hot syrup, fruit, chocolate chips and whipped cream.
