Strawberry Pie - Family Recipe

They love spending time together. Working, playing, vacationing and baking together is such a treat for these sisters.


Baking is one of their favorite things to do together, besides crafting. So we thought we would share some of their favorite recipes with you. As any good recipe that has been handed down through multiple generations, we'll give you their tweaks to these recipes.


Strawberry pie is a favorite spring treat. As soon as you can get a good smelling batch of strawberries, make this simple pie. It's easy for kids to make, since there's no real baking involved. Plus licking the beaters is so very delicious.


Strawberry Pie

  • 2 Cups Warm Water

  • 1 Cup Sugar

  • 1 pkg Strawberry Koolaid

  • 9-10 TBS Ultra Gel

  • Pie's worth of strawberries or about 4 cups or 2 pints

Crust

  • 1 Cup of graham crackers (crushed)

  • 1/2 Cup powdered sugar

  • 1/2 Cup Butter (softened)

Whipped Topping

  • 1 Cup whipping cream

  • 4-6 TBS sugar

  • Splash of vanilla

The hardest part of of this recipe is finding Ultra Gel. This is an awesome thickener like corn starch, but requires no cooking. So it's an instant thickener. We use it for jams, jellies, pies, maple syrup and anything that needs to be a little thicker. In Utah County, we've purchased it at Macey's, Stokes, and Payson Market.


Mix the water and Koolaid in a bowl or mixer. In a seperate bowl, mix the ultra gel and sugar together. Slowly add the sugar mix to the water and blend until smooth and thick like jelly. If the mixture doesn't seem thick enough, slowly add more Ultra Gel. Wash and cut up strawberries, then add to mixture.


To make crust. We usually use about 1-1 1/2 little packs of graham crackers for one pie crust. Blend graham crackers, powdered sugar and butter in a food processor. Press mixture into bottom of pie pan. We like to bake our crust for about 10 min to set the crust, but this is not necessary.


Fill pie pan with strawberry mixture and chill. Mix whipping cream with beaters on high until stiff peaks form. Slowly add sugar to mixture with beaters on high. Or just cheat and get a bottle or tub of whipped cream. We like both options.
